It's Shrove Tuesday! Otherwise known as Pancake Tuesday, a Canadian favourite for maple syrup smothering... and as you can also clearly see mine on the top left included a "bit" of butter. Ha! Some people are more sensible and go with yogurt and berries, but you know, I had to have mine with butter and syrup in order to demonstrate the variety of serving options.
With the exception of the intro to this post my wonderful Mum essentially wrote (and cooked up!) this amaaaazingggg reintroduction to the Ooooommm Nom Nom Series. Big shout outs to Mum! This pancake recipe is not only full of all kinds of healthy goodness, it's also Gluten free, and has vegan options. Warning: it's a hearty pancake, not light so don't be doubling or tripling the batch, you probably won't eat that many, and almond flour is pricey so you won't want any to go to waste!
Hearty Brunch Pancakes
Dry Ingredients
3 cups almond flour
1 tsp. pink or sea salt
1 tsp. cinnamon
Liquid Ingredients
5 eggs or egg substitute equivalant
splash of vanilla
2 cups water, milk, nut milk (more or less to desired consistency) Batter needs to pour not be too thick.
Use a good heat tolerant oil to cook ie. avocado oil or coconut oil
1. Combine dry ingredients
2. Mix liquid ingredients well and blend slowly into dry ingredients
3. Make certain that pan is covered with oil and drop batter evenly to make pancakes. They behave as conventional pancakes in that they begin to form an edge and bubbles when they are ready to be turned.
Serve with real maple syrup and yogurt, cream, or keffir.

- I find a medium low burner good, but you will have to experiment with your individual burner.
- Take liberties and add berries, chopped nuts, chocolate chips....
